Our first step to achieve this goal was to install a solar thermal system. This system is wonderful for generating hot water but has limitations at high temperatures necessary for distillation. To bridge the gap until we can install our own solar electric system, we are purchasing Renewable Energy Credits (REC) to offset our purchased electricity.

It is a wonderful release matured in a small barrel that previously held one of our first whiskeys.
Cranberry Brandy

Our Cranberry Brandy features delicious notes of cranberry, citrus, vanilla, and oak that leaves a warm, rich finish. We enjoy sipping this brandy neat on the porch watching the sunset. It is always nice to be the first, and it appears that our Cranberry Brandy is just that. Searching online turns up cranberry liquors and flavored brandies, but not brandy distilled directly from cranberry wine.

The mid-palate brings us back to earth with a well-balanced blend of spices surrounded by coriander and cinnamon. The finish is crisp and clean. Our London Dry Gin is made from the same neutral spirit used to produce our premium vodka.

Solar Spirits Barrel Finished Gin opens with lighter notes of juniper enveloped in a blend of cardamom, fennel, and cassia. The mid palate arrives with a pleasant warmth provided by the cinnamon and oak. Our Barrel Finished Gin is the result of an extensive experimentation. An early recipe for an adventurous gin resulted in something that tasted a little more like a holiday cookie than a gin martini.
